White chocolate and apricot mousse
Set-up and preparation: approx. 25 mins
Refrigeration: approx. 2 hours
Makes 4 glasses of approx. 200 ml
- Allow the apricots to simmer with the sugar, water and thyme in a covered pan for approx. 3 minutes. Pour the mixture into the glasses, leave to cool.
- Make approx. 20 g of chocolate shavings with a peeler and set aside. Chop the rest of the chocolate finely, put it in a thin-walled bowl over gently simmering water, without letting the bowl touch the water. Remove the pan from the heat, leave the chocolate to melt, mix until smooth, and add the yogurt. Pour the mixture into the glasses, cover, and refrigerate for approx. 2 hours.
- Decorate the mousse with the chocolate shavings that were set aside and the thyme.
