Preparation

Bernois waffle biscuits / For approx. 50-60 biscuits 

  1. Cream the butter and gradually add the sugar and the eggs.
  2. Incorporate the sieved flour and the cocoa powder until the mixture has a thick and even consistency. 

Cooking 

  1. Preheat the waffle iron.
  2. Shape the mixture into balls, place them in the waffle iron and bake according to the manufacturer's instructions (usually 2 mins).  

A gourmet idea: For a more chocolatey taste, replace the CAILLER Cuisine cocoa powder with CAILLER Cuisine chocolate powder. 

Fribourgeois waffle biscuits / For approx. 35-40 biscuits 

  1. Cream the butter and gradually add the sugar, eggs and water.
  2. Incorporate the sieved flour and the cocoa powder until the mixture has a thick and even consistency. 

Cooking

  1. Preheat the waffle iron.
  2. Place a spoonful of dough in the waffle iron and bake according to the manufacturer's instructions (usually 2 mins).
  3. Roll the waffle biscuits as soon as they are cooked. 

A gourmet idea: Use a piping bag to fill the inside of the Fribourgeois waffle biscuits with ganache made from CAILLER Cuisine Noir 64%, CAILLER Cuisine Lait or CAILLER Cuisine Blanc. 
A gourmet tip: Straight after baking, place a waffle biscuit over a glass to form a small coupe for serving ice cream, sorbet or fruit salad.
